Head On Shell On
The "Head On Shell On" or also called "HOSO" for short is the terminology used internationally in trading and selling of whole prawn.
20/30 stands for the size in this case its 20 to 30 pieces per kilogram, all whole prawn specifications are usually specified in kilogram compared to the peeled specifications that specify in pounds. This 20/30 are prawns in the size range of 40-27 grams.
Real Count and Frozen Count
Prawns are usually sold with an industry norm of 20% glazing which is a protective layer of frozen water to protect the delicate prawn and retain its quality. "Real Count" refers to the sizing of the prawn made excluding the glazing and frozen count with the glazing making the "Real Count" the larger prawn compared to the "Frozen Count".
